Chef Mara Ellison opened Ember & Oak in 2022 in a converted mechanic's garage on Hudson Street. The hearth was built first; everything else came after. We cook over oak and applewood, we butcher whole animals on Mondays, we change the menu every week, and we keep the room to thirty-eight seats so the pace of the night stays the pace of dinner with friends.

Reservations open thirty days in advance at 10:00 a.m. Eastern. A limited number of counter seats at the hearth are held for walk-ins each evening from 5:30.

The full dining room seats thirty-eight for a plated dinner, or forty-six for a standing reception. The chef's counter, a six-seat bar at the mouth of the hearth, is available for buyouts Tuesday through Thursday with a custom tasting menu from Chef Ellison.

Mara Ellison

Mara grew up cooking on a wood stove in rural Vermont. She trained at the Culinary Institute of America and spent twelve years at Saison in San Francisco, Blue Hill at Stone Barns, and — formatively — a long stage at Etxebarri in the Basque Country, where she first learned the patient discipline of cooking over embers.
She came back to New York in 2019, spent two years walking the Hudson Valley meeting farmers, and signed the lease on the Hudson Street garage in early 2022. She is a Food & Wine Best New Chef (demo) and a two-time James Beard semifinalist for Best Chef New York.
She still works the hearth herself six nights a week.
